Questions
What happens where there's no cell service?

It keeps working. The tablet saves the stop on the device and marks it 'waiting to upload.' Next time it picks up signal it sends everything up on its own. Your driver doesn't have to do anything, or even notice it happened.

Can we keep our current rates and item types?

Yes. You name the item types the way your crew says them, and the rate book holds the prices you already charge. Per head, per cwt, per mile, per stop. Fuel surcharge, and a different rate for one particular customer, both work.

Can you get our old data out of Access?

Usually. Send us what you've got and we'll do the first import together on a call: customers, item types, rates. Your old system keeps running the whole time, so there's no day where you're between the two.

Do drivers ever see what customers are charged?

No. A driver's screens have no rates, no totals and no invoices on them anywhere. They see the stop and what to write down. That's deliberate, and it isn't a setting somebody can flip by accident.

Does it work on the tablet we already own?

Probably. If it runs a reasonably current browser you're fine. The buttons and steppers are sized for a gloved hand and the contrast is set high enough to read in the sun, so an older cheap tablet is usually plenty.
